Which brings us to Sunday, where a friend had a housewarming party, which for me, really is just an excuse to bake something (as usual). Today's project? Chocolate fudge cookies!
These yummies are a hybrid between a cookie and a fudge brownie - a lot of different types of chocolate in here, but not too sweet! Really easy to make as well - no special techniques needed, just make 'n bake!
In TV news, I am so excited that fall TV is back on, with three of my favorite shows premiering this past week and one new show I'm interested in. A quick brief about this week's TV: (spoilers for Revenge, Vampire Diaries, Scandal, The Originals, Project Runway, and HIMYM)
Revenge - calling it now, Emily's shooting is a setup she planned (although I hope it isn't)
Vampire Diaries - two deaths = typical season premiere, and I think human Katherine is going to be the best thing about this season (please don't let her blood be another cure because she took the cure)
Scandal - Olivia got out of that way too easily and remind me why Fitz is a good president again?
The Originals - interesting but different enough from Vampire Diaries, and also STOP KLLING ELIJAH
Project Runway - I'm rooting for Dom, but okay with Bradon winning too.
HIMYM - not as good as the premiere eps, but still fun. This Ted/Robin/Barney thing needs to be over soon.
Also White Collar is starting again soon, Legend of Korra has already apparently been on for awhile (probably marathon that over Thanksgiving), and Doctor Who 50th Anniversary episode airs in a month and a half.
Chocolate Fudge Cookies! (makes ~2 dozen)

- 1/4 cup unsalted butter (half stick)
- 2 cups of semi-sweet chocolate chips
- 3/4 cup sugar
- 3 eggs
- 1 tsp vanilla extract
- 3/4 cup of Hershey's Special Dark Cocoa (mix of regular and Dutch cocoa)
- 1 cup of all-purpose flour
- 1/4 tsp baking powder
- 1/4 tsp salt
- 1 cup of milk chocolate chips
- Over a double boiler (I just put a heat resistant bowl over a saucepan of boiling water), melt the butter and the semi-sweet chocolate chips. Remove from heat and let cool to room temperature.
- Beat sugar and eggs together with hand mixer until thick (3-5 minutes).
- Mix egg mixture into chocolate mixer. Add vanilla and continue to stir with mixer.
- Mix dry ingredients (cocoa, flour, baking powder, salt) together and fold into the wet mixture by hand until just mixed.
- Fold in milk chocolate chips.
- Cover bowl and chill in fridge for 30 minutes.
- Preheat over to 350 degrees. Form ~2 inch balls from the dough and press down slightly to form rounded discs.
- Bake for 10 minutes or until the tops get glossy and start to crack. Don't overbake! Pull from oven and let cool. Enjoy!
