While at the store buying ingredients though, I wasn't able to find any peanut butter baking chips. I stood there for a minute, weighing my options, until I saw the butterscotch chips and decided those would be a good substitute. I would still get the peanut butter flavor with the peanut butter cups, but this way, I could add an additional flavor to the bars! Success!
These were SO GOOD, especially for the time it took to make them! They are very rich, however, so I wouldn't recommend eating too much at a time...
Weekly Brief Reactions to TV (spoilers for all the shows in this past week!):
Vampire Diaries - this show isn't one for dragging out plotlines so can people start figuring out Bonnie is dead already? At least they released Stefan from the safe. Also human Katherine is just as badass and awesome as vampire Katherine, so they got that right too.
The Originals - can't Davina just call Mystic Falls and ask them how they killed an Original? They did spend a whole season figuring it out and I don't want to watch that AGAIN in the spin-off...
Project Runway - glad that Helen is out and rooting for Dom to win!
Scandal - the thing with Huck at the end was actually difficult to watch and also her dad is a huge manipulative jerk
HIMYM - the worst episode so far this season; I'm waiting for the writers to get back to premiere quality
Revenge - Totally called Aiden working for Emily this whole time and I want to be invited to a Nolan Ross party
Peanut Butter Chocolate Butterscotch Brownies (makes one 9x13 pan)
(adapted from Crazy for Crust)
- 1 box of brownie mix (I used Duncan Hines Chewy Fudge Brownie Mix)
- 1 egg
- 1/2 cup (1 stick) of unsalted butter
- 1/2 cup of butterscotch chips
- 1 cup of milk chocolate chips
- 8 Reese's Peanut Butter Cups
- 1 can of sweet condensed milk (14 oz)
- Preheat oven to 375 degrees.
- Mix brownie mix, egg, and butter together until a thick dough forms.
- Line a 9x13 baking pan with foil and press the brownie dough into the bottom of the pan.
- Roughly chop the peanut butter cups and toss with the chocolate and butterscotch chips. Spread on top of the brownie layer.
- Drizzle the can of condensed milk over the chips.
- Bake for 30 minutes or until edges begin to brown.
- Let cool completely before cutting (else it's too soft) and enjoy!
