Dark chocolate caramel cookies


I'm pretty self-aware that I watch way too much TV, but as long as I do it while baking or folding laundry or something, it's totally justified. How else I'm supposed to pass the time while cookies bake?


Maybe I was just super tired this week, but what's with all the episodes this week making me feel so many emotions? Between "La Vie En Rose" and the rest of the Mother's story on How I Met Your Mother, Katherine freaking Pierce and the 100th episode on The Vampire Diaries, Marcel/Davina, Marcel/Klaus, or everyone/everyone on The Originals, and one of the freakier Pretty Little Liars episodes yet, it was a good week for television. If only it could be this good every week (I'm looking at you, HIMYM, with that latest Slapsgiving episode...).

But I digress. The star of this post are these amazing dark chocolate cookies, stuffed with caramel and topped with sea salt:


I made these at the request of one of my friends for his birthday this week. The recipe is from Sally's Baking Addiction, which is quickly becoming one of my favorite baking blogs and the source of so much of my inspirations.

There were pretty simple - the cookie dough contains cocoa powder and dark chocolate chips and then its wrapped around a Rolo chocolate caramel candy and sprinkled with sea salt before going into the oven.


Side note: why are there so many birthdays during the end of January/beginning of February? There are so many birthday parties and birthday baking requests right now. Not that I'm complaining or anything....

Salted Dark Chocolate Caramel cookies (makes 2 dozen)
(Recipe adapted from Sally's Baking Addiction)

  • 1/2 cup of unsalted butter
  • 1/2 cup of white sugar
  • 1/2 cup of dark brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup of flour
  • 1 tsp baking soda
  • 2/3 cup of unsweetened cocoa powder
  • 1/8 tsp salt
  • 2 tbsp almond milk
  • 1 1/2 cup dark chocolate chips
  • 2 dozen mini Rolo candies
  • Sea salt
  1. Cream butter and sugars together in a stand mixer on medium speed until fluffy. 
  2. Beat in egg, followed by vanilla, and keeps stirring until smooth. 
  3. Sift the flour, baking soda, cocoa, and salt together in a separate bowl. 
  4. Slowly add dry to wet ingredients and beat on low speed until combined. 
  5. Beat in milk, and then fold in the chocolate chips. Dough will be very soft and sticky.
  6. Chill dough for 2 hours. 
  7. Preheat oven to 350F
  8. Roll 2 tbsp of dough into a ball, flatten it, and then wrap it around a Rolo candy. Repeat with all the dough and candies. 
  9. Sprinkle sea salt on top right before placing in oven.
  10. Bake for 10 minutes. Cookies will look soft and underdone.
  11. Cool for 5-10 minutes and then transfer from cookie sheet. 
  12. Enjoy! :)
