Peanut Butter Nutella Cookies!

Looks simple, but TASTES SO GOOD
Last week, my new roommates and I took a trip to Costco to stock up on all the necessities...we ended up buying so much that my car had trouble accelerating on the drive home.

When we walked past the Nutella, my roommate stopped and grabbed one of those two-pack bottles.

Roommate: You want this, don't you?
Me: Well....
Roommate: Yeah, you do. *tosses it into cart*

So I have lots of Nutella now, and while I could totally eat it all by itself, I figured it would work nicely in my baking as well!

These cookies have peanut butter and Nutella, but they also have browned butter, which is sort of like caramelizing the butter. There's also a bit of cinnamon in there too, so there are many flavors in this seemingly simple cookie.

I adapted the recipe for myself from this recipe. I also plan on making more Nutella recipes in the future, so stay tuned for that!

Peanut Butter Nutella Cookies (makes ~3 dozen)

Ingredients: 

  • 1 1/3 cup of flour
  • 3/4 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp cinnamon
  • 1/2 cup unsalted butter (one stick)
  • 1/2 cup peanut butter
  • 3/4 cup brown sugar
  • 1/2 cup white sugar
  • 1/4 cup Nutella
  • 1 egg
  • 1 tsp vanilla extract
  • ~1 cup chocolate chips
  1. Mix the flour, baking soda, baking powder, salt, and cinnamon together. 
  2. Melt the butter in a small saucepan over medium heat, whisking frequently until the butter begins to brown and it smells caramel-y. Pour butter into separate bowl and let cool. 
  3. Mix peanut butter into butter with electric mixer until smooth. 
  4. Mix in the sugars (brown and white) until smooth
  5. Mix in the egg, Nutella, and vanilla extract until smooth. 
  6. Mix in the flour mixture until just mixed. 
  7. Stir in chocolate chips by hand. 
  8. Chill dough in fridge for half an hour.
  9. Preheat oven to 350 degrees. 
  10. Roll dough into 1-2 inch balls and placed on wax paper covered pan. 
  11. Bake for 12-15 minutes, or until the edges begin to look slightly crisp. Don't overbake!
  12. Let cool and EAT.
