S'mores brownies


Life is getting busy, but there's always time for baking! Once I get a better handle on my schedule, I can make fancier desserts, but while I'm still getting fully settled in, I've been sticking with simpler recipes, like cookies and brownies.

Brownies are actually my favorite dessert to eat, but for some reason, I don't make them too often. I had leftover s'more ingredients from an event though, and since I already made cookies from the last time I had leftover marshmallows/chocolate/graham crackers, I went with a different route this time.


There are three (very delicious) layers to this brownie. The bottom layer is the brownie itself. I always prefer the dense fudgey brownies over the fluffy cake-like ones, and this brownie is no different. The batter itself is so thick that its almost a dough and has to be press into the baking pan. This layer gets baked by itself first until it is almost done.

Next, marshmallows were lined up on top of the brownie layer and then the whole thing is baked for a little while longer to slightly toast and melt the marshmallows.


After the baking was done, I melted chocolate and spread that on top of the toasted marshmallows. Finally, as a finishing touch, I sprinkled graham cracker crumbs as the top layer - and ta-da! Four layers of chewy campfire goodness.

These brownies are best enjoyed soon after baking, while everything is still warm and gooey, since they tend to harden up the next day. They are still good though - just warm them up in the microwave briefly before eating!


S'mores Bronwies (makes one 7x11 brownie)
Recipe adapted from Chocolate Moosey

  • ½ cup of unsalted butter
  • 2 oz of unsweetened baker's chocolate
  • ½ cup (43 g) of cocoa powder
  • 1¼ cup (125 g) white sugar
  • ¼ tsp of salt
  • ¾ cup (94 g) of all-purpose flour
  • 1 tsp of vanilla extract
  • 1 egg
  • A bag of marshmallows (you will have leftovers)
  • 2 cups of chocolate chips
  • 1 cup of graham cracker crumbs (about 3-4 full graham cracker sheets)
  1. Preheat oven to 350F. 
  2. Melt butter and baker's chocolate together in a large saucepan. Remove from heat and let cool slightly. 
  3. Sift cocoa, sugar, salt, and flour together and then add to melted mixture.
  4. Stir in egg and vanilla and mix (by hand) until completely mixed. Batter will be VERY thick. 
  5. Line a 7x11 pan with parchment paper and spread the batter in the pan. 
  6. Bake for 15 minutes or until the edges are barely done but the middle is still slightly raw.
  7. Remove from oven and line marshmallows on top of brownies. 
  8. Return to oven and bake another 8-10 minutes until the marshmallows start to puff up and brown slightly. 
  9. Melt chocolate chips and spread on top of marshmallows. 
  10. Sprinkle graham crackers on top. 
  11. Let all the layers set and then cut into squares. 
  12. Enjoy!
